用料  

32 buns with a bit extra filling
dough
flour 300 g
water 180 g
dry instant yeast 1/2 tsp
filling
ground pork 1 lbs
soy sauce 3 spoons
shao xing 3 tbsp
napa cabbage 7 leaves
onion 1/4

pan fried buns的做法  

  1. --- dough
    mix all, rest overnight

  2. --- filling
    add soy sauce and mix (* important to do it first!)

    add shao xing and mix

    add ginger powder, onion powder and mix

    add oil ( a lot) and mix well

    rest overnight

  3. --- before making
    - chop napa cabbage (or carrots) and onion to mix in with the filling
    - add salt and sesame oil to the filling

  4. wrap!

  5. heat up the pan, add oil and start to place buns into the pan

    turn off heat and add lid on to let the buns rest

    remove lid and turn on the heat again, stay on high temp till the bottom is crusty

    add water and put on lid to steam for ~ 7 mins
