Mornay Sauce 是 Bechamel Sauce 的二道酱。
用料
Bechamel sauce 法国基础白酱 | 1 qt |
Swiss cheese (grated) 瑞士奶酪 (刨丝) | 8 oz |
Parmesan cheese 帕马森奶酪 | 2 oz |
Butter (cold) 黄油(冷) | 2 oz |
Salt | TT 适量 |
White pepper | TT 适量 |
Mornay Sauce 法式奶酪酱汁的做法
Bring bechamel to a boil and then turn off the heat. 将法国基础白酱烧开,然后关火。
Add both cheeses until they are melted. 加入两种奶酪搅拌直到融化。
Season with salt and pepper. 用盐和黑椒粉调味。
Adjust the thickness with milk, if necessary. Mount the sauce with butter. 如酱汁太稠,可加入适量牛奶,将酱汁调至NAPPE(放入汤勺拿起后,酱汁刚好将汤勺裹住薄薄一层不滴落的状态)
* Maccaroni with cheese. 将酱汁拌入通心面做成奶酪通心面。
* Broccoli with Mornay Sauce. 将奶酪浇在西兰花上,做成奶酪酱西兰花。
