tortillas 6-8
shredded Monterey Jack cheese or other of choice 2 cups
Roughly chopped coriander 3/4 cups
Corn kernels 1 cup
Filling of choice below 1
馅子调味料:
Onion powder 1 tsp
Dried oregano 1 tsp
Salt 1 tsp
Cumin powder 2 tsp
Paprika 2 tsp
Black pepper 1/4 tsp
Cayenne pepper (optional) 1/4 tsp

牛肉馅:
Olive oil 1/2 tbsp
Garlic cloves minced 2
Onion finely chopped 1/2
Ground beef 1 lb
Small bell pepper or red capsicum diced 1
Tomato paste 2 tbsp
Water 1/4 cup
鸡肉馅:
Olive oil 2.5 tbsp
Skinless boneless chicken thighs 1 lb
Garlic cloves minced 2
Small onion sliced 1
Small bell pepper or red capsicum diced 1
蔬菜馅:
Vegetable oil 2 tbsp
Onion diced 1
Garlic cloves minced 2
Black beans drained 1 can
Bell pepper or capsicum diced 1
Corn kernels 1 cup
Tomato paste 1/4 cup
Water 1/4 cup

墨西哥芝士馅饼(记录自用)的做法  

  1. 【馅饼】

  2. Place tortilla on work surface. Sprinkle one side with a bit of cheese, top with Filling of Choice. Sprinkle with corn (skip for vegetable filling), coriander and top with cheese. Fold in half.


  3. Preheat non stick skillet over medium low heat (no oil, if pan is not non-stick use 2 tsp oil).

  4. Place quesadilla in skillet, press down lightly, cover with lid. Cook for 3 minutes until underside is super golden brown and crispy.

  5. Carefully flip over the folded edge (see video). Press down lightly. Cook for 3 minutes until crispy (no lid).

  6. Transfer to cutting board, cut in half. Serve immediately! Dipping Sauce options: Sour cream, salsa, Avocado Sauce

  7. 【馅子调味料】Mix ingredients in a small bowl. Use for one of the Fillings Options below.

  8. 【馅子选项】

  9. 牛肉馅:

  10. Heat oil in a skillet over high heat. Add onion and garlic, cook for 2 minutes.

  11. Add beef and cook, breaking it up as you go. Once it changes from pink to brown, add capsicum. Cook for 1 minute.

  12. Add tomato paste, water and Spice Mix. Cook for 2 minutes. Transfer to bowl, cool.

  13. 鸡肉馅:

  14. Drizzle chicken with 1 tbsp oil, toss to coat. Sprinkle over Spice Mix, toss well to coat.


  15. Heat 1 tbsp oil in a large skillet over high heat. Add onion and garlic, cook for 2 minutes. Add capsicum and cook for 1 minute. Transfer to bowl, cool.

  16. Return pan to stove, reduce to medium heat. Add remaining 1/2 tbsp oil. Add chicken and cook for 3 minutes until deep golden. Turn and cook for 3 minutes until cooked through.


  17. Transfer chicken to cutting board, rest for 2 minutes then dice and cool. Combine with capsicum mixture.

  18. 蔬菜馅:

  19. Heat oil in a skillet over high heat. Add onion and garlic, cook for 2 minutes. Add capsicum, cook for 1 minute.

  20. Add beans, corn, tomato paste, water and Spice Mix. Cook for 2 minutes. Transfer to bowl, cool.

小贴士

* Makes 6 generously stuffed or 8 normal quesadillas
* Cool Fillings before assembling tortillas = crispier
* Freezer option: Assemble quesadillas then freeze before cooking. Wrap in cling wrap then place in ziplock bags or airtight containers. Thaw then cook per recipe. Can microwave 40 seconds or so to thaw.
* Bake option (can make loads in one go): Follow directions in this Chicken Baked Quesadillas recipe.
* Can also make flattish burritos, wrap in foil then bake until crispy (about 30 minutes at 180C/350F). These can also be frozen, thaw before cooking.
